Instant Pot Dudhi Chana nu shaak
Ingredients
- 1 dudhi/opo squash
- 1 cup Chana dal
- 1-2 tablespoons of oil
- Mustard seeds
- Hing/asafoetida
- 1 green chilli
- 4-5 cloves garlic
- 2-3 roma tomatoes
- 1/2 tsp Turmeric powder
- 1/2 tsp red chili powder
- 1 tsp cumin coriander powder
- 1 tsp salt
- 1 cup water
- Cilantro for garnishing
1) Wash and soak chana dal for about 1 hour.
2) Peel and chop opo squash in cubes and also chop tomatoes.
3) Place instant pot on sauté mode and place oil, add mustard seeds, hing, then garlic and green chili. After about 30 seconds add tomatoes. Let saute for few minutes and add masalas and salt. Now add dudhi and soaked chana with 1 cup water and stir. Cook on high pressure for 8 minutes and let natural release.
4) Taste and adjust salt if needed. Garnish with cilantro.
