Baked Feta Pasta



 




Ingredients                                                                      

  • 1 pint cherry/grape tomatoes    
  • 1 red bell pepper
  • 1 large red onion
  • 10 cloves of garlic                                             
  • 1 block feta cheese
  • 12 oz pasta of choice
  • Salt to taste
  • Black pepper
  • Crushed red pepper
  • Olive oil
  • Pesto
  • Dried herbs-parsley, oregano, basil, thyme
  • Fresh herbs

Method
 
1)  Put tomatoes along with chopped onions, red pepper, and garlic in greased baking pan. Add about 2 tablespoons of olive oil, dried herbs of choice, crushed red pepper, salt, black pepper, and stir well. Now, in middle, placed feta cheese block. Drizzle with more olive oil on top of this and add the dried herbs, crushed red pepper, black pepper. 

2)  Place in oven for about 375 degrees for 35 to 40 minutes until tomatoes are bursting and feta is golden on top.

3) On the side, boil water and cook pasta on stovetop. Be sure to keep about a cup of pasta water before draining(you will need about 1/2 cup but keep some extra just in case)

4) Once done, remove pan from oven and mash with fork. Then add cooked pasta, 1/2 cup pasta water, and pesto and mix well. It is optional to place back in oven for about 5-10 minutes. 

5) May add fresh herbs-basil, parsley for garnishing.
