Quinoa pulao instant pot

 

Ingredients

  • 2 cups quinoa rinsed
  • 2.5 cups water
  • 1 onion chopped
  • 2 cups frozen vegetables
  • 1 green chili pepper
  • 1/4 teaspoon mustard seeds
  • 1/4 teaspoon cumin seeds
  • 2 tablespoons oil
  • 1 bay leaf
  • 2 green cardamon
  • 2 cloves
  • 1/2 inch ginger 
  • 3 cloves garlic(optional)
  • 1.5 teaspoon salt
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala(optional)
  • Lemon or lime juice
  • Garnishing-cilantro and 1 diced tomato

Method

1) Turn on instant pot to sauté mode and add 2 tablespoons of oil. Once warm, add mustard seeds, cumin seeds, bay leaf, green cardamon, and cloves. Next add ginger, garlic, and green chili. After about 30 seconds, add onions and let cook for 1-2 minutes before adding frozen vegetables(you can also add fresh mixed veggies). Now add salt, turmeric powder, red chili powder, and garam masala. Add rinsed quinoa along with 2.5 cups of water and mix well.

2) Pressure cook for 2 minutes with natural release.

3) Garnish with diced tomatoes and cilantro with lemon/lime juice.
