Baingan Bharta Instant Pot
Ingredients
- 1 large eggplant diced
- 1 onion
- 1 large tomato
- 2 tsp oil
- Cumin seeds
- 1 green chili
- 4-5 cloves of garlic
- 1/2 inch ginger shredded
- 3/4 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/4 tsp garam masala
- 1/2 tsp coriander powder
- 3/4 tsp salt
- 1/2 cup water(may add about 3/4 cup water if needed depending on consistency)
- 1/2 cup green peas(optional)
- Cilantro for garnishing
Method
1) Start instant pot on sauté mode, add oil, once warm add cumin seeds, after about 20 seconds, add ginger, garlic, green chili. After about 20 seconds, add diced onions. Let sauté for about a minute or two. Then add tomatoes and all masalas and salt. Sauté for 1-2 minutes, then add diced eggplant, mix, and add 1/2 cup to 3/4 cup water.
2) Pressure cook for 9 minutes with natural release.
3) If you would like to place green peas and they are frozen, place green peas in microwave safe bowl with water and microwave for 3-6 minutes to cook.
4) Mash eggplant mixture with hand masher in instant pot, now add green peas, mix well and let it sit there for few minutes.
5) Serve and enjoy, garnish with cilantro if desired.
