Moong dal bhaji instant pot
Ingredients
- 1 cup moong dal
- 6-8 oz fresh spinach
- 3 cups water
- 2 tsp oil
- Mustard seeds
- 1 green chili
- 1 tsp salt
- 1/2 tsp turmeric powder
- 1 tsp coriander cumin powder
- 1 tsp red chili powder
Method
1) Wash and soak moong dal for about half an hour
2) Place instant pot on saute mode and add oil, then add mustard seeds, garlic, green chili, let sauté for about 30 seconds, then add moong and 3 cups of water. Add masalas(turmeric, coriander cumin, and red chili powders) and salt. Pressure cook for 4 minutes and let natural release for about 5 minute
3) Now add chopped spinach and place on saute mode for few minutes. May add water if needed to desired consistency. Enjoy with a sprinkle of lemon or lime juice with roti or rice.
*If using frozen spinach, add the spinach in step 2 with the moong dal and allow it to pressure cook.
