Instant Pot Khichdi
Ingredients
- 1 cup rice-soaked
- 1 cup moong dal or other lentils-soaked
- 1.5 cups frozen veggies
- Ginger 1 tablespoon
- Garlic 4-5 cloves
- 2 green chilis
- Ghee/oil-2 tablespoon
- 5 cloves
- 1 cinnamon stick
- Mustard seeds
- Cumin seeds
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 tablespoon salt
- 3.5 cups of water
1) Turn on Instant Pot to sauté mode and place ghee/oil, once starts to melt, add mustard seeds, cumin seeds, cinnamon stick, cloves. After about 30 seconds, add ginger, garlic, and green chilis. Then add frozen veggies. Saute for about a minute. You can also add other veggies, like onions, bell peppers, cauliflower, potato, tomatoes, etc
2) Now add the soaked riced and dal to the mixture followed by water, salt, turmeric, and red chili powder.
3) Pressure cook for 8 minutes and let natural release for about 5 minutes, then can manual release
