BAKED FALAFEL WITH CANNED CHICKPEAS WITH YOGURT SAUCE

FALAFEL

Ingredients:

  • 2 cans chick peas 15.5 oz
  • 1 onion
  • 5 cloves garlic
  • 1 cup parsley 
  • 1/2 cup cilantro 
  • 1/2 cup mint (optional)
  • 1 green chili pepper 
  • Salt to taste
  • Cumin powder
  • 5 tablespoon extra-virgin olive oil 
  • 1/2 teaspoon baking powder
  • Black pepper to taste



Method:

1. Food process onion, garlic, green chili, cilantro, and parsley.  Remove water from the processed mixture and place in separate bowl/cup for use for yogurt sauce if desired. Now food process chickpeas. Place in bowl and add salt, cumin powder, black pepper, lemon, oil, and baking powder. Mix with spoon and taste.

2. Make patties(can use ice cream scoop) and place in greased/sprayed pan. Place in refrigerator for about a half hour to an hour. When ready to bake, coat/spray patties with oil.

3. Bake at 400 F for 30 minutes. Flip and bake for 10 more minutes or longer until brown and crispy on both sides.

 

MINT YOGURT SAUCE

           

Ingredients: 

  • 1 teaspoon honey
  • 1/2 teaspoon cumin powder
  • Pinch of salt
  • 1 clove garlic chopped finely or grated
  • Few mint leaves finely chopped
  • Pinch of crushed red pepper
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 cups of yogurt





Method:
  1. Mix all ingredients in bowl and let sit to marinate. May add water from food processed mixture left aside from above
