Vegetarian Tortilla Soup
Ingredients:
- Vegetable broth-32 oz
- Garlic
- Bell pepper-1
- Onion-1
- Frozen corn bag-12 oz
- Black bean can-, 14-15 oz
- Pinto bean can-14-15 oz
- Diced tomatoes-14-15 oz
- Jalapeno-1
- Salsa verde-12 oz
- Tomato paste-2 spoons
- Chili powder-1/2 tsp
- Cumin powder-1/2 tsp
- Salt to taste
- Oil
- Corn starch
- Garnishing-avocado, cilantro, green onion, cheese, sour cream, tortilla chips or strips
Method:
- Turn instant pot to saute mode and add oil. Once warm, add garlic, onion, and bell pepper and saute few a minutes. Next add corn, followed by rest of ingredients. Place on pressure cook high for 15 minutes with natural release.
- Add corn starch to thicken if needed.
- Garnish and enjoy!
