Vegetarian Tortilla Soup

Ingredients:
  • Vegetable broth-32 oz
  • Garlic
  • Bell pepper-1
  • Onion-1
  • Frozen corn bag-12 oz
  • Black bean can-, 14-15 oz
  • Pinto bean can-14-15 oz
  • Diced tomatoes-14-15 oz
  • Jalapeno-1
  • Salsa verde-12 oz
  • Tomato paste-2 spoons
  • Chili powder-1/2 tsp
  • Cumin powder-1/2 tsp
  • Salt to taste
  • Oil
  • Corn starch
  • Garnishing-avocado, cilantro, green onion, cheese,                                                                           sour cream, tortilla chips or strips
Method: 
  1. Turn instant pot to saute mode and add oil. Once warm, add garlic, onion, and bell pepper and saute few a minutes. Next add corn, followed by rest of ingredients. Place on pressure cook high for 15 minutes with natural release.
  2. Add corn starch to thicken if needed. 
  3. Garnish and enjoy!
