Tomato Soup

Ingredients
- 5 to 7 tomatoes
- 1-2 onions
- Red bell pepper
- Carrots
- Black pepper whole
- Cumin seeds
- Thyme
- Basil
- Bay leaf
- Olive oil
- Butter
- Few drops of vinegar
- Crushed red pepper
- Handful cashews soaked in a couple spoons of milk



  1. In a pan, combine olive oil and butter. Then add cumin seeds, whole black pepper, bay leaf, and garlic and onions and saute. 
  2. Once cooked, add carrots, red pepper, crushed red pepper, thyme, and basil. Stir and let cook.
  3. Then add chopped tomatoes with a little bit of water few drops of vinegar, and salt and sugar along with the milk soaked few cashews. 
  4. Once tomatoes are soft, turn off stove and let cool.
  5. Blend the mixture into a desired consistency.
  6. Pour mixture in a pot and simmer.


INSTANT POT WAY
Pressure cook 5 minutes with natural release about 20 minutes
