Green Enchiladas
Ingredients:
For sauce:
For beans:
Assembly:
- For Beans:
- Black beans - 2 cans
- Onions
- Jalapenos
- Garlic to taste
- Cumin powder to taste
- Chili powder to taste
- Salt to taste
- For Sauce
- 2 Avocados
- Garlic
- Sour cream - half a container
- Jalapenos
- Lemon juice to taste
- Salt to taste
- For Assembly
- Tortillas
- Cheese
- Green onions
For sauce:
- Combine all ingredients in a blender and blend. Do taste test to make sure flavor is to liking.
For beans:
- In a pan, saute garlic, onions, jalapeno peppers. Add canned black beans along with cumin powder, chili powder, and salt along with about half a cup of water. Cook until most of water has evaporated. Turn off stove.
- Once beans have cooled place mixture in food processor or mash until it's the consistency of your liking.
Assembly:
- Coat the insides of the tortilla with some sauce, beans, green onions, and cheese. Roll them up and place in a greased oven safe tray.
- Apply sauce over the enchiladas and top with cheese. Cover the tray with aluminum foil.
- Place enchiladas in a preheated oven at 325 degrees for 30 minutes.
