Green Enchiladas

Ingredients:

  • For Beans:
    • Black beans - 2 cans
    • Onions
    • Jalapenos
    • Garlic to taste
    • Cumin powder to taste
    • Chili powder to taste
    • Salt to taste
  • For Sauce
    • 2 Avocados
    • Garlic
    • Sour cream - half a container
    • Jalapenos
    • Lemon juice to taste
    • Salt to taste
  • For Assembly
    • Tortillas
    • Cheese
    • Green onions


For sauce:

  1. Combine all ingredients in a blender and blend. Do taste test to make sure flavor is to liking.

For beans:

  1. In a pan, saute garlic, onions, jalapeno peppers. Add canned black beans along with cumin powder, chili powder, and salt along with about half a cup of water. Cook until most of water has evaporated. Turn off stove.
  2. Once beans have cooled place mixture in food processor or mash until it's the consistency of your liking.

Assembly:

  1. Coat the insides of the tortilla with some sauce, beans, green onions, and cheese. Roll them up and place in a greased oven safe tray.
  2. Apply sauce over the enchiladas and top with cheese. Cover the tray with aluminum foil.
  3. Place enchiladas in a preheated oven at 325 degrees for 30 minutes.
