Veggie Paratha
Ingredients:
Wheat or all purpose flour to make dough
Veggies of choice
Potatoes 2, baked
Fennel seeds
Sesame seeds
Cumin seeds
Oil
Turmeric powder
Garam masala powder
Amchur powder
Garlic
Ginger
Salt to taste

- Bake potatoes and keep aside
- Food process carrots and other veggies of choice
- Take frozen green peas and place in microwave in bowl of water for about 3 minutes then food process them
- Dry roast fennel seeds and sesame seeds in a pan
- In a pan, add oil, cumin seeds, garlic. Then add carrots, curry leaves, ginger, and cook for few minutes. Then, add green peas followed by turmeric, garam masala and mango powders. Add salt. Mix dry roasted fennel seeds and sesame seeds in later.
- Now make dough
- Roll and stuff the paratha, cook them.
