Sweet Potato and Black Bean Burger


 
Ingredients:
Black beans 45 oz
Two sweet potatoes
Onion
Bell pepper
Carrots
Garlic
Jalapeno pepper
Cumin powder
Chili powder
Paprika powder
Salt to taste
Black pepper


  1. Peel and cut sweet potatoes, place on a tray, and put in toaster oven, cook for about 20 to 30 minutes until soft.
  2. In a pan, Place olive oil, finely chopped onions, garlic, cook for a few minutes, Follow by shredded food processed carrots, let cook for few minutes, then add finely chopped bell peppers and jalapeno pepper, also optional corn. Add salt and spices. Once cooked, turn off flame.
  3. Drain and wash canned black beans, place in large bowl and smash. Now add sweet potatoes, and smash them together. Add bread crumbs and 2 to 3 teaspoons of all purpose flour. Lastly, add sauteed vegetables, and mix well.
  4. Make patties and place in a tray, place in refrigerator or freezer for an hour or two. Then, place on grill, and cook both sides.
